Freekeh (also known as Farik) is an ancient Middle Eastern grain that has been a staple in the peoples diet for centuries. It is derived from wheat that is harvested when it is young and green, then roasted on an open fire until the straw and chaff are burned off. The grain on the inside is left undamaged as it is too young and moist to burn, leaving a firm, slightly chewy grain with a delicious earthy, nutty and slightly smoky flavour.
Freekeh is high in protein, fibre and is extremely rich in minerals, making it an ideal alternative to quinoa, rice and other grains. As a wheat product, it is not gluten-free so should not be consumed by those with a wheat intolerance.
