This succulent juicy root is one of the most economically important crops in Asia which produces nearly all of the world’s commercially grown Ginger. Thought to have originated in India, this plant is grown for its medical benefits as well as widely used in cooking. Both Chinese writings and Ayurvedic medical scriptures mention the benefits of Ginger and its application under the names ‘Shen Jiang’ and ‘singabera’. Ayurvedic references go as far back as 2,000 years but probably stretch much further into the past. In Europe Alexander the Great brought the spice back to Greece where it was grown and studied by Hippocrates and Dioscorides who prescribed it for cooking, calming the nerves and curing ‘darkness of sight’.
The Ginger root is sometimes described as a horn because of the way it grows. The rhizome stretch laterally through the earth and become bulbous oddly shaped roots. The rhizome is the part of the plant that is edible and has a corky skin with a pale yellow fleshy aromatic centre. The part of the plant that grows above ground is reed like, with waxy looking foliage that grow up laterally in large fan shapes. The flowers grow on short stems and produce small yellow flowers on a cone shaped bud.
