Natural Chocolate is simple and easy to make.

The Chocolate ingredients must be handled carefully, the Cacao Butter must be melted over a bowl of boiling water. When the butter has liquefied, the dry ingredients can be stirred in.

Firstly add flavourings such as vanilla powder, then Cacao powder, then sweetener such as Agave Syrup.

The chocolate is still runny at this stage so must be poured into moulds before it sets. The moulds can be put in a freezer to set for 20 minutes, then the chocolate easily pops out of the mould. For full instruction go to our How to make Raw Chocolate Page.

Method for Making Chocolate:

You will need the following equipment;

• A bain marie (ie. a large saucepan of boiling water with another heat proof bowl floating inside it).
• A mixing spatula or spoon.
• Molds for the chocolates to set in. You can use ice trays or cake cases.

1. Boil up the water for the bain marie then remove from the heat.
2. Gently melt all the Cacao Butter in the Bain Marie until the last of the solids have just disappeared.
3. Add in the Cacao Powder and mix thoroughly until it is smooth.
4. Add in the Agave and mix until completely blended.
5. Pour out the molten Chocolate into molds and allow to set.
6. TIP: put the moulds into the freezer to help them set quickly. Remove after 15 minutes and pop out of moulds.
7. Refrigerate to keep fresh.
