Irish Moss is sometimes called “carrageen moss” from the Irish “carraigín”, meaning “little rock”. This species of seaweed grows abundantly along the rocky parts of the Atlantic Coast of Europe, the Americas and Japan.

Used for centuries in Ireland (hence the name!), Irish Moss is used in many raw food recipes for its nutritional and thickening properties, making it a fabulous addition to a raw vegan diet. The principal constituent of Irish Moss is a mucilaginous body, made of the polysaccharide Carragenan of which it contains about 55%; the plant also has nearly 10% of protein and about 15% minerals and is specifically rich in iodine and sulphur. Because of the abundant cell wall polysaccharides, it will form a jelly when boiled or processed with water expanding from 20 to 100 times of its weight.

Contraindications:

Irish moss functions as a thinner. As a result, individuals that are taking anticoagulant medications (blood thinners) should abstain from using Irish moss in any form.

Folate – the naturally occurring vitamin B9 – is often confused with folic acid.  Folic acid is a synthetically derived molecule created in a German laboratory in the 1940s and does not occur naturally in food.  Needless to say, folate metabolizes faster in the body and any excess is excreted through the urine whereas folic acid can accumulate in the blood and may adversely affect immune cell function.  Nature knows best when it comes to nutrition!  Folate is probably the vitamin whose essential role in pregnancy is most widely known.  It is necessary for the production of new DNA which is needed for the production of new cells – the growing life within the womb engages in constant cell division and the mother must expand her blood supply with the production of new red blood cells – these activities demand a generous supply of folate.
