The reach of this plant spans entire continents and has long been used in Europe as a herbal botanical and sweet delicacy. Being recorded by Dioscorides in his De Materia Medica it is thought that the ancient Greeks learnt about the uses of Liquorice from the Scythians. Later, Roman writers also allude to the plant calling it Radix dulcis. From the Middle East to China this herb spread during the medieval period and was used for differing purposes. The Chinese now use Liquorice as a base for many of their traditional herbal concoctions while in Europe, because it is about 50 times sweeter than sugar, it has become more associated with confectionery.
Mainly cultivated for its roots, the Liquorice plant is a member of the pea and bean family with the name originating from the Greek; glykys meaning 'root', and rhiza meaning 'sweet'. With long fronds comprising many feathery light green to dark green leaves this plant has flowers that can range from purple, violet and also white to yellow. The root system, depending on species, can be very large and can penetrate to a depth of 3-4 feet.
