Our Organic Raw Buckwheat has many health benefits due to its high vitamin and mineral content. It is high in heart-healthy Magnesium, the heart has the highest requirement of Magnesium than any other organ in the body – it cannot function properly with insufficient amounts of this important mineral. Buckwheat is a source of Potassium, another important mineral to the heart with its vasodilating properties helping to relieve tension in the blood vessels, thus maintaining the normality of blood pressure.
High in Vitamins B2, B3 and a source of Vitamins B5 (Pantothenic Acid) and B9 (Folate) – these nutrients are powerful antioxidants to brain cells and are often referred to as “mood vitamins” as they help the body make feel good hormones such as serotonin, norepinephrine and dopamine. The importance of these vitamins in energy metabolism cannot be overstated – with the exception of Folate, all of the B Vitamins play a critical role in the breakdown of proteins, carbohydrates and fats into energy we can use. Digestive enzymes require these vitamins to “pull out” the macronutrients from storage in the cells. Pantothenic Acid in particular – through its incorporation into a molecule called coenzyme A (CoA) - occupies a central place in energy metabolism, acting to allow carbohydrates, fats and proteins to be burned as energy sources.
Although only a source of Protein, the protein found in buckwheat is of very high quality – it is a complete protein (containing all the essential amino acids) and is especially high in lysine.
Completing the impressive nutrient profile of Buckwheat are the antioxidant minerals Zinc, Copper and Manganese which are also crucial to the immune system. Your body needs Zinc to make T-cells, a type of white blood cell that fights off foreign invaders in your bloodstream, and Copper to make healthy white blood cells. Copper and Manganese are powerful antioxidants, Manganese is a component of the antioxidant enzyme Superoxide Dismutase (SOD). This is the body’s primary antioxidant and it’s most potent defence against free radicals and the ensuing inflammatory reactions.
After rinsing, place the Raw Buckwheat in a pan and add double the amount of water with a little salt. Cover pan and bring to a simmer on medium/low heat for 10 minutes until all the water has been absorbed. Taste and add water and cook for longer if necessary.
