All trees are grown to full European Organic Certification standards. When mature, the pods of the Carob tree are knocked from the tree taking care not to disturb the flowers which are open around the same time. The pods are then sun dried before being soaked in pure water. The syrupy water is then gently heated until it thickens to form a delicious sticky syrup. The syrup is then tested for pollutants and made ready for shipping.
