Historically Kale has been a very important vegetable for Europeans living in the deep North. Being very resistant to frost and cold, this leafy green vegetable could be easily grown and would survive into the colder months to give people early winter nutrition. In fact, Kale has experienced one of the most fascinating transformations in plant history. Originating in the Mediterranean region, Kale is a part of the species Brassica oleracea which also encompasses cabbage, kohlrabi, cauliflower, broccoli and Brussels sprouts. It's possible that these leafy greens at some point all looked the same and over centuries of selective breeding they have become distinctive in their own right. Since the 5th century BCE Kale has been bred to have bigger leaves without a head like broccoli. With the preference for a bigger central formation of young leaves Kale became less popular until recently where it has taken over from cabbage.
Kale comes in many varying forms depending on look. These varieties are Curly-leaved (Scots Kale), Plain-leaved, Rape Kale, Leaf and spear (a combination of the first two mentioned) and Bumpy leaved (cavolo nero). Some varieties can reach up to 7 foot while others are compact. Leaf shape and colour vary depending on variety and there also exists ornamental Kale that can have red, blue, white and violet rosettes at their center; even these varieties are edible.
