Mung Beans are high in dietary fibre, in particular they are rich in pectin, a soluble fibre which speeds up the movement of food through the gut, thus helping to keep bowels regular. Pectin also works with the good bacteria in the intestines, turning the fibre into a soothing coating for irritated intestinal walls.
An excellent source of folates, one serving of Mung Beans provides over 100% of the RDA for folates. Folate, along with vitamin B-12, is one of the essential co-factors for DNA synthesis and cell division. Adequate folate in the diet around conception and during pregnancy may help prevent neural-tube defects in the newborn baby.
Mung Beans are also high in plant protein, whilst not providing all of the essential amino acids they can be combined with other plant sources to make up a whole protein. Also high in many minerals, one portion of these tasty beans provides around 20% of the daily intake of potassium. Potassium is essential to a healthy heart, with vasodilating properties which help to maintain normal blood pressure. They are also high in magnesium, a mineral known as "nature's chill pill", it relaxes the muscles that control blood vessels, allowing the blood to flow more freely, also helping to reduce high blood pressure.
Rich in iron, iron is crucial in formation of haemoglobin, healthy immune function, energy production and much more. Mung Beans contain good amounts of copper, zinc, manganese and selenium - antioxidant minerals that work together to scavenge free radicals and protect cells from oxidative stress. Left unchecked, free radicals can cause havoc in the body. This is just one of the many health benefits these minerals provide.
Mung Beans can be cooked and added to stir fries, soups and stews. They can also be sprouted and used as a healthy addition to salads.
