Natural Chocolate is simple and easy to make.

The Chocolate ingredients must be handled carefully, the Cacao Butter must be melted over a bowl of boiling water. When the butter has liquefied, the dry ingredients can be stirred in.

Firstly add flavourings such as vanilla powder, then Cacao powder, then sweetener such as Agave Syrup.

The chocolate is still runny at this stage so must be poured into moulds before it sets. The moulds can be put in a freezer to set for 20 minutes, then the chocolate easily pops out of the mould. For full instruction go to our How to make Raw Chocolate Page.

  • Raw Organic Cacao Butter Wafers have a wonderful light heavenly aroma, and slightly bitter sweet chocolate taste, they can be used to make chocolate bars, by adding Cacao powder. The wafers can be sweetened with a naturally sweet super-food such as coconut blossom nectar, fruit powders, dried fruit, dried berries, agave nectar, honey, or the herbal sugar free sweetener Stevia.

Indigo Herbs Raw Cacao Butter Wafers come from the northern highlands of Peru in the Cajamarca. Once the cacao beans have been harvested they are fermented and sun dried. The temperatures are strictly monitored during the fermentation process to make sure they remain under 40°C, then the cacao is sun dried until it reaches a humidity of 7%.

Next the cacao is washed and machine dried at low temperatures until it reaches a humidity of 3% which produces Raw Cacao Beans. The beans are placed in a winnower which splits the beans and removes the skin, producing Raw Cacao Nibs. The smaller nibs are then milled to produce Raw Cacao Paste – the mill has a custom designed cooling system that ensures temperatures do not reach above 40°C.

To produce the Raw Cacao Butter the paste is pressed which yields Raw Cacao Butter and a cake of Raw Cacao Powder. The pressing process is done at low pressure to guarantee that temperatures don’t rise above 40°C, additionally a thermocouple allows the temperature to be monitored throughout. Once the Raw Cacao Butter is obtained it is moulded into easy to use wafers and tested before being made ready for shipping.

Cacao contains caffeine and other similar stimulants. Although side effects are minimal, eating large amounts might cause caffeine-related symptoms.

Having had the chunks of cacao butter and loving it, I decided to purchase the buttons as they're more user friendly for my needs. I love this stuff!
