Cacao contains caffeine and other similar stimulants. Although side effects are minimal, eating large amounts might cause caffeine-related symptoms.
Indigo Herbs Organic Raw Cacao Paste comes from the northern highlands of Peru in the Cajamarca. Once the cacao beans have been harvested they are fermented and sun dried. The temperatures are strictly monitored during the fermentation process to make sure they remain under 40°C, then the cacao is sun dried until it reaches a humidity of 7%.
Next the cacao is washed and machine dried at low temperatures until it reaches a humidity of 3% which produces Raw Cacao Beans. The beans are placed in a winnower which splits the beans and removes the skin, producing Raw Cacao Nibs. The smaller nibs are then milled to produce Raw Cacao Paste – the mill has a custom designed cooling system that ensures temperatures do not reach above 40°C. The paste is then tested for pollutants before being packaged up and made ready for shipment.
Please note that cacao nibs do contain some cacao butter, therefore cacao paste naturally has cacao butter in it, and can be used as a base to make your own chocolate.
