Our Yacon Syrup is a fantastic dietary source of "fructooligosaccharides", sugar molecules connected in a way that makes them unrecognisable to the digestive system. They stimulate the taste buds but cannot be digested making this a great low carbohydrate/low GI alternative to sugar. It is pre-biotic, feeding the friendly bacteria in the digestive system, when the bacteria digest the fructooligosaccharides they produce short chain fatty acids which are thought to have anti-obesity effects.

Yacon Syrup is made from the big bulbous roots of the Yacon Plant. All roots have been cultivated under strict organic parameters insuring that no pesticides or chemical fertilizers have been used in the farming process. After the roots have reached peak maturity they are harvested and brought in for processing. After selection the roots are washed and peeled before being scalded. They are then put into a special juice extractor to harvest all the internal Yacon juice. This juice is then filtered and put into a vacuum concentration unit to evaporate out most of the water. After this process the Yacon Syrup is filtered again and tested before being made ready for shipping.
