Pu Erh tea is made from the leaves and stems of the Camellia sinensis plant. The leaves and stems are harvested from wild trees in the Yunnan Province of China by farmers who hold the ancient knowledge of producing Pu Erh tea. After harvest the leaves are heat treated in a process that requires incredible precision - they must be heated for just long enough to halt oxidation but not long enough to reduce all of the moisture and kill the bacteria which is essential for the fermentation and aging process. The tea is then shaped into bricks or logs and stored for the aging process, to allow for the complex flavours to develop. The tea is then tested for pollutants before being made ready for shipment.
