Purple Corn Products

This is a very important crop in the history of South America as it has supported many of their ancient civilisations and gained a reputation as one of the most loved vegetables in the world. This is another very old crop that has been a staple and supported whole civilisations in South America. It is well documented that the Maya, Inca and Aztecs all grew corn and it featured heavily in their lives. It is thought that as far back as 9,200 years ago wild corn varieties were beginning to be used as food. By 2,000 BC corn was supporting the ancient civilisations mentioned above and had changed almost beyond recognition from the wild ‘Kculli’ variety that it originated from. Corn was so important to the Maya that it is written in the ‘Popol Vuh’ (their creation story) that humans were first created out of corn meal. So what makes purple corn so special? It is the purple pigment that has developed over time and holds all the antioxidants. Even today in Peru purple corn is used to make a drink called ‘chica morado’ and is enjoyed throughout the country and especially in the Andean valleys region.
Purple Corn grows like all other corn in the Maize family. There are both male and female plants with male flowers being called the tassel. The stalk grows with single large long leaves from the each node. The stalk can reach heights of around 2.5 meters and resembles bamboo in some respects. The corn cobs grow from the nodes between the stalk and each leaf and are round, long and covered in a leaf sheath for protection. Protruding from the top of the cob are fine silky hairs which act as stigmas. The cob is sometimes called the seed as it has multiple kernels attached.
