Spinach was first mentioned for its medical benefits in the works of the physician al-Rāzī in around 647 AD. Spinach is a leafy herbaceous annual plant in the Amaranthaceae family. The spinach plant has simple leaves which stem from the centre of the plant and measure about 2–30 cm long and 1 to 15 cm across. The leaves grow in a central bud and can appear crinkled or flat. The plant produces small yellow-green flowers which produce small fruit clusters and eventually contain seeds at the end of the season.
