While some sources say that Spinach originated in Persia there are others that promote this vegetable coming from northern India. Being a cold loving plant evidence points to the latter. It was the Persians that began writing about Spinach and spread it all over the Arab Mediterranean. Spinach was first mentioned for its medical benefits in the works of the physician al-Rāzī in around 647 AD. The popularity of the King of Leafy Greens soon spread to Sicily with the invasion of the Saracens where the rest of Europe soon found a place for this vegetable in their culinary dishes. It is thought that Spinach entered England from Spain in in the 14th century where it was popular because it was the only vegetable to be ready in early spring when all other vegetables were scarce.
Spinach is a leafy herbaceous annual plant in the Amaranthaceae family. The spinach plant has simple leaves which stem from the centre of the plant and measure about 2–30 cm long and 1 to 15 cm across. The leaves grow in a central bud and can appear crinkled or flat. The plant produces small yellow-green flowers which produce small fruit clusters and eventually contain seeds at the end of the season.
