When the Conquistadors arrived in Mexico in 1519 they recorded much of the Aztec habits and found that a favoured part of their diet was something called ‘tecuitlatl’. Tecuitlatl was a cake that was pressed from an algae harvested from the nearby Lake Texcoco which the Aztecs thought was the excrement of the stones. Tecuitlatl was in fact Spirulina and sometimes mixed with Cacao to make a very rich nutritious meal right up until the fall of the Aztec Empire. It was not until 1940 that the Frenchman Pierre Dangeard discovered certain African tribes who lived around Lake Chad also harvested and pressed Spirulina into a cake to eat. He recorded that the tribes regarded it highly as a good substitute to meat and called it ‘dihe’. Even though Dangeard tried to get the scientific community to realise the benefits of Spirulina, it wouldn’t be until the 1960’s that a man called Jean Leonard finally started to commercialise Spirulina for all to benefit from its restorative powers. Spirulina is now eaten worldwide and is produced commercially in the United States and many countries in Asia.
So what exactly is Spirulina? This blue-green algae is a cyanobacterium that materialise on subtropical lakes with a high pH and high levels carbonate and bicarbonate. Spirulina harvests sunlight and turns it into complete protein and all the nutrients critical for sustaining life. Later scientific investigation has now classified Spirulina as Arthrospira but the former name has been kept to lessen confusion in the commercial market.
