Considered the most cheerful flower in the world, the Sunflower is a symbol of light, hope, and innocence. Native to North America and growing up to a dauting 12 feet, the wild Sunflower was first domesticated by the Native Americans who are responsible for its appearance as a single headed flower. The Sunflower was used in many ways by the various American tribes. The seed was ground into flour to make cakes and bread as well as being eaten as a snack. The oil was also used in bread making and it was seen as a high quality source of fat.
Sunflower Seeds came into mass production in Russia from the prohibition of cooking oil during lent. As it was one of the only oils not to be prohibited by the Russian Church sunflowers were produced on a massive scale. By the 19th century Russia was growing two million acres of sunflowers for use as seeds and oil. In the 1880’s Russian Mammoth Sunflower varieties were being sold in America where it underwent hybridisation to form the sunflower varieties we use today.
