Indigo Herbs White Tea Pai Mu Tan comes from the freshest, youngest tips of the Camellia sinensis plant. The processing is of the leaves is fairly basic although the leaves are handled with great care as any damage to the leaf skin will alter the taste. There is no rolling of the leaves in this regard. First the leaves are left to wither outdoors in the sun for 1-3 days. Then they are brough indoors and withered for a further couple of hours. After withering the leave go to final drying phase where the oxidation of the leaves is stopped. After this the leaves are tested and made ready for shipping.
